Nettle Protein Balls
All of our nettle has gone to seed, so I've switched from eating the leaves to harvesting the highly nutritious seeds. It's quite a tedious process but it is so rewarding to collect seeds that are a high source of vitamins and minerals, as well as essential fatty acids and folic acid.
Netto seeds can be added to oatmeal or porridge, salads, used in baking, or you can try this tasty protein balls recipe!

In this recipe I used almonds and oats which I ground up in a coffee grinder. You can switch out a portion of either of these ingredients for protein powder if you'd like.
Recipe:
1 cup ground almonds
3/4 cup ground oats
1/2 cup nettle seeds
1/4 cup flax/chia seeds
1 cup peanut butter
3-4 tbsp maple syrup or honey
Combine all ingredients in a bowl and shape into balls. I used about 2 tbsp per ball and got a total of 13 balls.
